Today I’m taking you inside 10 million pounds of potatoes and giving you a full tour of our storage cellar. We just finished filling this cellar with 100,000 sacks of fresh potatoes, and before we move on to the next one, I wanted to show you exactly how this whole system works. From the control room, plenum temps, humidity settings, and fresh-air doors, to the massive industrial fans and humidifiers, you’ll see how we keep potatoes cool, stable, and ready for the grocery store all winter long.
I walk you through the front of the pile, the vent pipes under the potatoes, the air tunnels, the climacell humidifier wall, and the Indiana Jones-style tunnel where the air is pushed through the pile. We’re cooling these potatoes from about 50°F down to 38°F so they store safely without drying out or rotting. I’ll show you how we prevent condensation, why we pump moisture back into the air, and how we monitor return-air temps to know how the potatoes are doing.
Finally, we climb up on top of the 18-foot-high pile to check for rot, mold, wet spots, and airflow problems. This is the behind-the-scenes part of potato farming that most people never get to see, and I’m excited to bring you along.
